Sugar paste figurines: how to make them, how long they last and when to put them on the cake
What materials do you need?
Sugar paste (modeling fondant) — available at NatyShop, gel food colorings, modeling tools, food-grade wire or toothpicks for internal structures, powdered sugar for the work surface.
Basic principles of modeling
Sugar paste is best worked at room temperature, not too warm (it sticks) and not too cold (it cracks). Warm hands help — knead the paste well before modeling. If it dries out, add a drop of cooking oil and knead again.
How to color sugar paste?
Add gel coloring directly into the white paste and knead vigorously. Wear gloves! The color will look lighter at first — it intensifies after a few hours. Always make more colored paste than you think you need, as precise color matching later is almost impossible.
How long does it take to dry?
Small figures (under 3 cm) dry in 12-24 hours. Large figures or those with complex details may require 2-5 days to harden completely. Let them dry at room temperature, on baking paper, away from humidity.
When should the figures be placed on the cake?
The basic rule: as late as possible. Ideally, add the figures to the cake on the day of the event or a maximum of a few hours before. Sugar paste figures absorb moisture from cream or fondant and can soften or deform.
Don't have time to make them yourself?
At NatyShop, you'll find a rich collection of ready-made sugar paste figures, handcrafted by experienced confectioners, available for christenings, weddings, anniversaries, and many other occasions. Fast delivery throughout Romania!
Liquid Food Coloring
It is the easiest to find and the cheapest. It is suitable for doughs and cake bases, thin water-based glazes, and coloring water or beverages.
Disadvantages: Poor pigmentation, colors are never very intense, adds moisture to preparations which can spoil whipped cream or fondant.
Gel Food Coloring
It is the standard in professional confectionery and the most versatile of the three. It has a high pigment concentration and a viscous texture that does not affect the consistency of preparations. It is ideal for whipped cream and buttercream, fondant and sugar paste, ganache and chocolate glazes, doughs, and macarons.
You can find a complete range of gel food colorings at NatyShop, available in all main colors.
Powder Food Coloring
It is the most concentrated of all and the most suitable for special applications: coloring melted chocolate, polishing and metallic effects on fondant, dry decorations that should not be moistened.
Disadvantages: More difficult to mix uniformly, can leave undissolved particles if not worked correctly.
Conclusion: what to choose?
If you are a beginner and want a versatile coloring that works for most preparations, choose gel coloring. If you are working with melted chocolate, you need powder coloring or special fat-soluble coloring. Leave liquid coloring for the supermarket or for coloring Easter eggs.

How to get a deep red color in whipped cream or buttercream - without ruining the texture
Why is it hard to get intense red?
The main problem is that whipped cream and buttercream have a yellow or yellowish-white base. The red pigment needs to overcome this background tint, which means you need much more coloring than for other colors.
Trick #1: the color intensifies over time
Dark colors, including red, need time to "mature." Add the food coloring 2-4 hours before using the cream, or even a day before and store it in the refrigerator. You'll be surprised how much the color intensifies without adding anything else.
Trick #2: use concentrated red food coloring
Not all red food colorings are created equal. There are standard red food colorings and extra-concentrated red food colorings specially formulated for whipped cream. At NatyShop, you can find gel food colorings with strong pigmentation, including shades of intense red and flame red.
Trick #3: neutralize yellow with a little purple
This is the trick of professional pastry chefs: before adding red, add a tiny amount of purple or violet food coloring. This neutralizes the yellow tint of the buttercream and makes the red appear much purer and more intense.
How much red food coloring do you need?
- Light red: 5-8 drops per 200g cream + resting time
- Medium red: 10-15 drops per 200g cream
- Intense/bright red: 20+ drops per 200g cream + the purple trick

How to Use Gel Food Coloring: A Complete Guide for Beginners
